What can take your seafood paella to the next level? Just one word: allioli. This garlickly mayonnaise is often served at restaurants in Spain alongside the paella, where diners can spread a bit with a spoon on their portion of rice and shellfish.
It is often made at home by grinding garlic cloves and salt in a mortar while slowly and painstakingly adding a drop or two of olive oil at a time, creating the emulsion and praying that it doesn't break before you've incorporated all the oil.
