What can take your seafood paella to the next level? Just one word: allioli. This garlickly mayonnaise is often served at restaurants in Spain alongside the paella, where diners can spread a bit with a spoon on their portion of rice and shellfish.  

It is often made at home by grinding garlic cloves and salt in a mortar while slowly and painstakingly adding a drop or two of olive oil at a time, creating the emulsion and praying that it doesn't break before you've incorporated all the oil. It has happened to the best of us -- the allioli is coming along beautifully, looking smooth and unctuous, and then, in seconds, it separates and you've got to start from scratch.

If that kind of stress is not for you, we recommend trying this jarred allioli from Spain. Made with nothing but oil, garlic, lemon juice, and salt, it's (almost!) as good as homemade. And certainly a lot simpler. Just open the jar, spoon into a dish, and serve with your next paella.
