The pan has a range of servings depending on whether you want a thin or thick layer of rice. While you can serve more people with a thicker layer, we prefer a thinner layer for the best flavor
Serves 40 to 70 people. This size is for serious paella cooks. It's weighty, solid, and will deliver excellent heat conduction. You'll need one of our paella burners, or a firepit or commercial stove to get heat under the whole pan.
Pata Negra is a professional quality paella pan made from an extra-thick and heavy-duty grade of carbon steel (aka polished steel, or acero pulido). It's a good choice for restaurant kitchens, or for home cooks who expect to give their pan a good workout. As with any carbon steel pans, these pans require a bit of care: you must dry the pan right after washing it and then rub the inside with a little vegetable oil to prevent rusting.
