Spanish Lentils

We’ll be honest. We were never huge fans of lentils, having grown up with the standard large brown variety that turns mushy with the slightest bit of overcooking. But then we discovered these small Spanish lentils. Wow, a revelation! Suddenly lentil salad was something to get really excited about. And lentil soup that’s silky smooth and doesn’t weigh you down, who knew that was possible?

These lentils have an earthy-nutty flavor and firm texture, and they retain their shape well, making them our go-to lentil for salads. They also cook very quickly, in about 15 to 20 minutes and without any soaking. Perfect for weeknight meals
