Its subtitle says it all: Everything you need to know to cook authentic paella at home, from the most basic recipes to lesser-known variations. Very true. Among its 108 recipes, you'll find all the classics, along with New York-style paella with sausages, paellas with all types of seafood, vegetarian paella, and a whole chapter devoted to dessert paellas, such as sweet paella with pears in white wine.

Alberto Herraiz is a Spanish chef who owns Fogon restaurant in France. His recipes are detailed and well-written, and he lays the foundation for improvising your own paellas in his section on paella cooking techniques. A great number of the recipes have photographs that capture the mood and style of each one. We love that not one but two ribbons - red and yellow - have been bound into the binding as bookmarks.

This is a book to both use in the kitchen and peruse in the armchair. It totally captures the paella experience.
