Manzanilla olivesThese are quite simply the classic Spanish olive, perhaps the most ubiquitous tapa in Spain, often served on a plain white dish without pretense or intention to to be anything more than it is, which is just a very satisfying olive. Hearty and flavorful, with a firm, meaty texture, they're perfectly delicious right from the jar, but if you wanted to gussy them up by marinating them in olive oil and fresh herbs, that wouldn't be a bad thing either.
