Socarrat Scraper - Nothing works better than this 14-inch long spatula (bottom in photo above) for scraping off the socarrat (the delicious caramelized layer of rice on the bottom of the paella pan). You can use your fork or a spoon, of course, but the flat beveled edge on this spatula does the job a lot more efficiently. Price: $6
Small Slotted Spatula - This carbon steel spatula (middle bottom in photo above) has a 3.5 inch diameter slotted flat blade and a 12 inch handle. Use it for the preliminary saute. Price: $6
Extra-long Flat Spatula - This carbon steel spatula (top in photo above) has a 4.5 inch diameter flat blade and a 19 inch long handle, perfect for cooking paella on the grill in pans 22 inches or larger. Price: $8
